Healthy Double Chocolate Cupcakes Recipe

All the girls from the gym are coming around for morning tea and you don’t know what to put out?
You’ve got a birthday party and don’t want to embarrass your kids by bringing out carrot sticks and celery?

 

 

Muffin Ingredients: 

  • 4 eggs
  • 1/2 cup coconut nectar
  • 1/3 cup coconut flour
  • 1/4 cup cacao powder
  • 1/2 teaspoon baking powder
  • 1/3 cup cacao butter (melted in microwave)

Icing Ingredients:

  • 1 can coconut cream (chilled in fridge overnight)
  • 1 teaspoon coconut nectar
  • 1 teaspoon cacao powder
  • A little bit of of shredded coconut

Cupcake Method:

  1. Preheat oven to 180C.
  2. Grease a mini cupcake tray with coconut oil.
  3. Beat eggs and coconut nectar together in a food processor.
  4. Add coconut flour, baking powder and cacao powder and beat well.
  5. Add melted cacao butter and beat well.
  6. Spoon mixture into cupcake trays and bake for 12-15 minutes until risen and top springs back.

Icing Method:

  1. Beat the solid coconut cream until creamy again.
  2. Mix in the nectar and cacao.
  3. Pipe topping onto cooled cupcakes.
  4. Sprinkle with fine shredded coconut to make it look fancy.
